Sra-Bua-1

Henrik Yde-Andersen, the mastermind behind the Sra Bua by Kiin Kiin (Michelin 1 Star)  menu and concept flew in to personally oversee and launch the new ‘Summer Journey Menu’, alongside resident head chef, Chayawee Suthcharitchan.

Sra-Bua-2

The menu comprises old-faves such as the ‘Tom Yum Kung’ which entails guests creating their own noodles by squeezing tofu out of a syringe into a piping hot bowl of Tom Yum. This dish is typically accompanied with a prawn cracker and lobster mayo Dim sum and a Prawn Taco and although the act feels a little dated, it’s always fun and highly refreshing.

Sra-Bua-3

As usual the dinner starts with savoury and sweet treats inspired by Thai street snacks that Chef Henrik Yde-Andersen has come across during his journeys in Bangkok or Thailand. One canapé which was rather amusing was the magic box, where the staff reveals a meringue which ‘magically’ appears after shaking a round box. The smokey infused ‘Sai Ua’ and the ‘Tom Kha’ ice-cream cone; beef Massaman croquette are also among the the welcoming treats, which were positive visitors to Thailand would be visibly impressed by.

There are two distinct highlights we believe would entice Bangkok Foodies, and one was the second course which is a celebration of East-meets-West ‘Larb Duck. Served in a glass bowl  white cabbage, mint, coriander and Japanese cucumber sorbet’. The service team prepare and toss table side, a selection of ingredients to complete this ‘larb’ inspired dish, such as minced duck, spicy tamarind sauce and roasted rice dressing from Northeast Thailand, but the surprise ingredient is – foie gras!

Most impressive however is Chef Henrik Yde-Andersen’s newest creation; the ‘Khao Mun Kai’ lava, a popular national street-food dish of ‘steamed chicken rice with chili, ginger and fermented soy bean sauce’.

Sra Bua 6

We loved how the elements of what make up a typical “Khao Mun Kai’ were created in separate forms. Starting with the tasty chicken rice, then for the sides; spherical chicken soup explosion, Chinese melon ‘lookchin’ stick and for the ‘main’, the chicken. The chicken, in this case, is transformed into a ball that when diners slice through it, the spicy Khao Mun Kai relish would ooze (or potentially squirt, so be careful) out like lava cake.

Sra Bua 7

Sra Bua by Kiin Kiin at Siam Kempinski Bangkok, we believe would be enjoyed not only by many locals but more a  titillating feast for friends and family visiting Bangkok and looking to explore Thai cuisine in fun and fantastical ways. If you’re lucky enough to run into Henk himself, prepare for some entertaining stories and tidbits on Thai food and history.
