Celebrate 55 years of diplomatic relations between Peru and Thailand with a special Peruvian dishes curated by Above Eleven, Chef Omar Frank Maruy and Tortilla Quemada Owner and Chef, Colin Stevens available at Above 11 and Tortilla Quemada from the 23 November to 18 December 2020.

The special menus will spotlight well-loved staples from the South American country under the Peruvian Superfood label.  The menu at Above Eleven comprises seven Peruvian dishes crafted by Executive Chef Omar Frank Maruy, while Tortilla Quemada’s Chef Colin Stevens has created two dishes for the promotion that is supported by PROMPERÚ, an agency responsible for the promotion of Peru in exports and tourism. The respective Chefs will be dishing out their special meals from their own locations during the promotional period.

The menu pays homage to Peru’s tremendous biodiversity and hugely varied geography, which includes the Pacific coast, mountain ranges and jungles, allowing the country to supply a wide range of top-quality fresh produce all year round.

And what great timing for such a celebration. Erick Aponte, Trade Commissioner of PROMPERÚ for Hong Kong and Southeast Asia had said, “This being the 55th anniversary of diplomatic relations between Peru and Thailand, we are pleased to partner with restaurants like Above Eleven and Tortilla Quemada to promote Peruvian dishes to a wider audience” 

Experience Above Eleven’s chapter of Peruvian dishes with the with Red Quinua Causa (THB280). A hearty mix of mashed potatoes, yellow chilli and lime, it is served with red quinoa tabbouleh, avocado cream, quail egg and red chilli huancaina sauce. 

Quinua Tamal (THB180) is a corn and quinoa tamale stuffed with a delicious filling of salsa criolla and feta cheese. For mains there is a choice of three dishes and proteins. Lamb is the star of the Black Quinotto and Lamb Seco (THB700). Black quinoa is used to make a sumptuous risotto and served with a slow-cooked lamb shank in yellow chilli, beer and cilantro sauce. 

For the Chicken Leg Pachamanca (THB450), organic chicken leg is roasted on Kamado grill in a quinoa tamale and comes with a quinoa cobb salad side. 

Beef with White Quinua (THB700) features beef cheek slow-cooked for 50 hours and quinoa and Parmesan cream. 

Wash it all down with the popular Peruvian drink, Quinua Carretillera (THB120). For dessert, the Quinoa Con Leche (THB250), white quinoa with coconut milk and served with a refreshing mango ice cream will satisfy the sweet tooth.

For the promotion, Stevens has created two specials to which will be available directly from Tortilla Quemada:

The TQ Super Bowl (THB310+ VAT) is a quinoa and cacao nib salad with pollo tinga, queso blanco and a jicama & chayote shoot salsa. The second one is Quinoa Con Carnitas Burrito (THB260+ VAT), a soft burrito stuffed with quinoa and pork carnitas, pickled red onions, charred peppers, beans, tomato, lettuce, queso blanco and salsa habanero.
