Paulo Airaudo’s Sartoria Serves Skyline Romance and Precision Plates at The Empire Sathron | Bangkok Foodies
Sartoria by Paulo Airaudo is perched high on the 56th floor of the EA Rooftop at The Empire, Sathorn’s soaring new culinary playground that’s fast becoming one of Bangkok’s most elite dining addresses. With several globally renowned chefs now claiming floors in this glistening skyscraper, the Bangkok edition features Le Du KAAN by Chef Thitid “Ton” Tassanakajohn and K by Vicky Cheng of Hong Kong’s VEA.

Sartoria may sit at the very top — quite literally — but it holds its own in every sense. With one of the most uninterrupted, awe-inspiring views of Bangkok’s glittering skyline we’ve seen, it’s the kind of place that demands a special occasion… or turns any evening into one, if you know what we mean. Dress accordingly.
The restaurant is the latest concept by Chef Paulo Airaudo, the Argentine-Italian maestro behind multiple Michelin-starred restaurants across Europe, including two-star Amelia in San Sebastián. Known for his laser focus on seasonal ingredients, modern techniques, and heartfelt storytelling through food, Airaudo brings a distinctive European finesse to Bangkok. Steering the kitchen on-site is Chef Giacomo Vinci, a trusted long-time collaborator whose quiet confidence and poise in the open kitchen adds both intimacy and theatre to the dining experience.

Before a single bite, guests are greeted tableside by the chef, who personally introduces the star ingredients of the evening — be it prized seasonal produce flown in or locally sourced at impeccable quality, like their 40-year-aged balsamic vinegar that they even invite you to taste. A thick, umami-rich nectar of a condiment that lingers like a fine wine.
The restaurant’s mood is sleek yet soulful. Soft lighting, plush seating, and warm tones create an atmosphere that’s both polished and inviting. It’s romantic without being stiff, luxurious without screaming it. A pro tip for the true foodies: book the booth directly across from the fully open kitchen — no walls, no barriers, just you and the unfolding ballet of culinary precision.

The Hamachi starter arrives like a sculptural rose, light and tangy with tiny pops of sea grape — yes, it’s the dish that’s going to hit your feed, but it’s more than just photogenic. The Risotto Carabinero, though, is the knockout — a vivid bowl of green herbaceous intensity, with parsley so fragrant it practically levitates, paired with sweet Spanish prawn and a bright citrusy lift from kumquat. The Duck Cappelletti is comfort in silk sheets — rich, earthy, and draped in a buttery thyme jus, while the Kinmedai comes lightly charred with white asparagus and a silken champagne sauce.
Dessert reaches a clever crescendo with “The Apple” — a textural play of caramel gelato and aged balsamic, sweet and sharp in perfect harmony. The only moment that didn’t quite land? The fresh fruit course — pristine but made with imported selections that felt oddly disconnected from Thailand’s lush local bounty. We’d love to see what this kitchen could do with rambutans, longans, or other native stars.

Still, Sartoria delivers on every front. It’s a true fine dining experience that balances nostalgia with modernity, polish with personality — a restaurant built on precision, warmth, and damn fine produce. And when you realise it’s part of a culinary constellation that includes Chef Ton’s Le Du KAAN and Chef Vicky Cheng’s K, both just a few floors away, it becomes crystal clear: The Empire isn’t just another address — it’s Bangkok’s new epicurean summit.
