Organic & Artisan Brand Goes Wild in Bangkok at Kimpton Maa-Lai Bangkok | Bangkok Foodies
The brainchilds behind this vibrant brand are two Chiang-Mai-born sisters, Dara Wongwan (Noi) and Tubtim Malaiarisoon (Nai), who sought to develop and produce speciality, artisanal products of Chiang Mai using the natural and organic resources from their urban farm and cooperating with close-knit farmers who hold the same fundamental principles.
The company, Wild Nature Chiang Mai Co., Ltd was launched in early 2020 and has steadily been filling grocery shelves and cafe shelves across Bangkok and now implemented into restaurant recipe menus.
In the heart of Chiang Mai’s district, Wild Nature Artisan grows organic herbs, flowers, and fruits of the season. The products are developed and created directly from the urban farm to their production plant. The modestly sized land is available for harvest all year round, where they transform the freshest of farm produce into small batches of artisan jams, organic infusions and organic herb salts, ready to be placed on shelves and in customer’s hands within weeks or sometimes days.
The launch was held on the 4th November 2020, where special guests were privy to witness and taste the creative beverage concoctions of Bar.Yard’s Aaron J Feder Beverage and Bars Manager, unique cocktails, but off course, with a Wild Nature Artisan twist!
The “Thai Banana” consisting of Wild Nature Artisan Banoffee Dreams Artisan Jam was all the things we love about tropical bananas; rich, aromatic and sweet. The smokey touch also brought out the intensity of the banana. The “Tom Yum Collins Jr.” made with the Wild Nature Artisan Tom Yum Organic Infusion was the perfect mix of exotic Thai herbs and spices with an almighty, satisfying kick of chili.
Chef Lamberto Valdez Lara, executive Chef of Kimpton Maa-Lai Bangkok, demonstrated to guests how to compose and cook simple recipes that can be easily replicated at home, using Wild Nature Artisan incredible products. The demonstration followed with a scrumptious dinner curated by Chef Lamberto and his team, who continued to weave Wild Nature Artisan products to create exceptional flavours,
The crowd hit, the Large River Prawns glazed with Memory of Kindness Artisan Jam: fresh pomelo & young coconut cashew nuts, crispy shallots with Red for Red Organic Herb Salt (which will become a main-stay on the Bar.Yard menu), with a Vegan option of Vegan Ceviche: hass mexican avocado, sweet potatoes, fresh coconut using Love Chiang Mai #1 Organic Herb Salt.
