Meal-Kits by Kitchen Chef-Kits Introduces New Ways to Cook At Home

          Ordering some delivery by using applications like Grab, Food Panda and Line Man has become part of Bangkokian’s eating culture now but “Chef-Kits”, a new concept for urbanists in Bangkok should get acquainted. Instead of having someone cook for you and deliver it to your door, you can get a box with prepared ingredients to cook the dish by yourself. The result is usually, freshly cooked dishes with minimal effort. Ideal for the lazy cook in you. 

          When COVID-19 Broke out in Thailand, restaurants were forced to close from dining out from 22nd March 2020 – 18th April 2020. Many depended on delivery online while many temporarily closed during that time, however, this became the catalyst of many habitual changes for Bangkokians and in the world in fact. There were people who lacked cooking skills and relied solely on having their food cooked and sent to them on a daily basis, while others got in touch with their inner “chef” and started cooking at home. Many people bought their ingredients online since going out — even for groceries —  although the grocery received at your door didn’t always reach the expectations of the buyer. Meal-Kits or Chef-Kits is other options for people who look for a quick and tasty meal without leaving the house or breaking a sweat.

        Kitchen Commerce, run by the same team of the fine dining restaurant, David’s Kitchen in Chiang Mai, have begun their meal kits since 2016.

          “Whilst the concept of Meal-Kits is not new, it’s already a multi-billion dollar industry in the US and Europe, we distinguish ourselves by providing fully prepared ingredients. This unique aspect results in additional convenience”, stated founder, Khuned Sachdev. “Our mission is to encourage healthy eating by converting quality ingredients into fresh and easy-to-prepare meals. We source from local farms in the hills of Chiang Mai with a focus on organic produce as often as possible”.

          John Jasins, Head of Production & Executive Chef, is the person responsible for creating the Kitchen Chef-Kits menu. The meal-kits are produced daily and delivered overnight to Bangkok chilled but never frozen. This ensures that the food arrives in your kitchen as fresh as possible. The recipes of the Chef-Kits constantly change, adjusting to seasonal produce, or creating new dishes and flavour profiles. 

          The menu in Meal-Kits contains dishes like Chef’s Vegetable Garden, French Onion Soup, Pan Roasted Salmon with Piperade. Each dish’s ingredients come in a hard brown paper box and all you have to do is to follow the procedure from the cooking manual which they provide inside the box.

          Bangkok Foodies began the test cooking of Chef-Kits with the French Onion Soup. The required pieces of equipment from your kitchen are a non-stick saute pan or pot and spoon. The ingredients are a vacuum bag of the soup, a toasted baguette with shredded cheese on top and chopped herbs. First, heat the soup in the pan on medium-low heat until it simmers then pour the soup into a bowl. Place the cheese bread on top of the soup. We wanted our French Onion Soup to be a little bit bourgie so we put it in the oven with medium heat until the cheese melted.

          Next box of Chef-Kits has more ingredients than the French Onion Soup. Chef’s Vegetable Garden which contains a bag of quinoa & tempeh, a bag of mixed cooked vegetables, a bag of Chimichurri sauce, a bag of herbed yoghurt, a bag of pumpkin seeds, a bag of herb salad, a tiny bottle of olive oil and a lime wedge. The equipment you need was a non-stick saute pan, a pot of hot water and a spatula or a large spoon.

          To start with the Chef’s Vegetable Garden, first, reheat the unopened bag of cooked vegetables in a pot of hot water then stir-fry the quinoa & tempeh in the saute pan in medium heat for 2 minutes. When the quinoa & tempeh is ready, pour everything from the pan to the plate then followed by the reheated vegetables then garnish the dish with pumpkin seeds and herb salad. Pour Chimichurri sauce and herb yoghurt into separate cups or you can pour them on the dish.

          The last box of Meal-Kits but not least, Pan-Roasted Salmon with Piperade. The box comes with potatoes, sweet pepper piperade, cooking oil, a salmon filet, spinach, chopped herbs, lime wedge and herb salad. They are all perfectly sealed. The kitchen tools that you need are a non-stick saute pan, a medium-sized bowl and a spatula or a large spoon.

          First, reheat the unopened bags of potatoes and sweet pepper piperade in the bowl with hot water for 5 minutes before cooking them. Remove the salmon from the bag and dry it a bit with a paper towel and season it with salt and pepper before putting it into the oiled saute pan but make some space for the potatoes as well. We accidentally poured the spinach in the pan without taking the potatoes and the salmon out first but we took them out later and cooked the spinach with 2 tablespoons of water for 30 seconds. We decorated the dish as pretty as we could.

          The cooking experience of meal-kits is quite swift. It didn’t take much time and it’s not too complicated for those who don’t have time or are not experts in the kitchen. All you have to do is go to their website and choose the food from their menu. Get it delivered to your door, whip up the meal per instructions, and make (or not make) the most of your new-found time.
