From 14 to 19 May 2025, Bangkok food lovers are invited to experience a high-energy, fine dining pop-up by one of Dubai’s most dynamic culinary names — Chef Kelvin Cheung of Jun’s Dubai. Hosted at Niche, Siam Kempinski Hotel Bangkok, this six-night event brings together global technique, Asian nostalgia, and playful precision in one unforgettable eight-course tasting menu.

Recognised by MENA’s 50 Best Restaurants (2023–2025), Gault Millau (1 Toque), and the Michelin Guide 2023–2024, Jun’s Dubai has built a reputation for “fun dining” — a philosophy that blends fine ingredients with unexpected flavour storytelling. Chef Kelvin’s dishes are inspired by his Chinese and Asian roots, North American upbringing, and a global cooking journey that’s taken him from Chicago to Mumbai to Dubai.

If “third culture kid” were a chef’s menu, it would be this one — blending Chinese, Thai, Middle Eastern, and more into a playful, seafood-forward flight.

Tasting Highlights

  • 🦪 Oysters with koji sambal and crispy fried shallots
  •  🐟 Dry-Aged Sea Bream with compressed watermelon, plated in a striking flower shape
  •  🦐 Kinilaw Amaebi – Filipino-style raw shrimp with Thai calamansi foam
  •  🍞 Farmer’s Bread – flatbread with a savoury dip of za’atar, foul, tabbouleh, and sumac
  •  🦀 Singapore Chilli King Crab – spicy hazelnut crab dip, served with mini mantou buns
  •  🐚 XO Scallops – tender scallops topped with parmesan garum and koji persimmon
  • 🥩 Wagyu Beef Cheeks – with claypot rice, stir-fried kimchi pork crackling, pickles, and wing beans, honouring the chef’s childhood
  •  💚Kaya Toast – pandan sponge with sesame balls and sesame crumble
  • 🍪 Petit Fours – featuring a fortune cookie, gummy bears, and a Dubai chocolate cookie

The eight-course menu is priced at THB 4,300++, with an optional five-glass wine pairing at THB 3,900++. Wines are served from the Farmer’s Bread course onward, and include standouts like:

  • Schubert Sauvignon Blanc (New Zealand)
  • Peter Lauer Feils Riesling (Germany)
  • Travaglini Gattinara DOCG (Piedmont, Italy)

Chef Kelvin’s Bangkok takeover offers the city a glimpse of a chef who makes bold, borderless cooking feel like home.
