Château Palmer Dinner Brings Together the Chefs from Le Du, Mume and Toyo Eatery
On 23 January 2019, Chef Thitid (Ton) Tassanakajohn and the team of Le Du Bangkok welcomed Chef Jordy Navarra of Toyo Eatery (Manila, Philippines) and Chef Richie Lin of MUME (Taipei, Taiwan) to create a stunning 6-hand dinner to showcase CHÂTEAU PALMER wines.

What made this dinner stand out was the fact that the chefs share a very similar food philosophy, favouring local-ingredient driven cuisine whilst redefining the traditional foods of their respective cultures. The night brought together Thai, Filipino and Taiwanese and Chinese flavours, with each chef contributing at least 2 dishes, integrating local Thai ingredients and the produce they sourced themselves from home.
This dinner wasn’t about each chef just bringing his dishes to the table. Their shared outlook and overlapping influence on each other’s cooking were apparent in a sensational dish like the Thai ox tongue with cucumber and Taiwanese spices.
Their harmony and friendship was evident over a few more glasses of Château Palmer wine to celebrate a successful night after the dinner. Château Palmer is a winery in Margaux, the prestige appellation in Haut-Médoc located just north of Bordeaux. The estate can trace its roots back to the middle of the 18th century and was classified as a Troisième Cru (third growth) in 1855. Over the course of the evening, we were treated to wine pairings with Château Palmer vintages of 1995, 2000, 2005 and 2012.
In the opinion of Bangkok Foodies, this threesome is the one to beat in 2019 (so far!). Not only was each dish a stand-alone feat but the menu in its entirety was exciting and cohesive, an achievement not always shared by other multiple handed dining events.
