This special seasonal menu offers a curated selection of heritage dishes. Highlights include:
- Miang Sot – Royal Herbal Cigars: A delectable creation filled with pork belly, peanuts, and dried shrimp. This dish, rooted in Chiang Mai’s culinary history, is believed to be an original recipe by Princess Dara Rasami. It masterfully combines bold flavours and unique textures.
- Faux Turtle Egg Salad with Longan and Prawns: A reinvention of an ancient aristocratic Thai salad from the King Rama V era, this dish delivers a perfect harmony of savoury, sweet, and refreshing flavours.
- Ngow Ngord Curry Soup: A rare gem from the Ayutthaya period, this curry soup features seabass, young watermelon, and basil. Originating as a Portuguese-influenced dish enjoyed by royal families, it evolved into a staple of Thai culinary artistry. This recipe, preserved through generations, exemplifies the fusion of foreign themes and local flavours.
-
Som Choon – Ancient Thai Dessert: A refreshing fruit salad delicately infused with jasmine essence, zesty ginger, and topped with crystal-clear rock ice. This dessert, celebrated in King Rama II’s famous Verse of Food and Dessert, is a delightful end to your meal.
“We are thrilled to revive the long-lost dishes once reserved for ancient Thai aristocrats with our Nimitr Heritage Menu, which celebrates the rich culinary traditions of Thailand” – said Chef Korawit Rungchat, Executive Chef at Nimitr Restaurant & Rooftop Bar. “Each dish combines the finest local ingredients with aromatic herbs and spices, offering a delicious blend of history, flavour, and sustainability.”
