Inspired by South American indigenous cuisine – and taking its name from nomadic hunters, gatherers, and fishers that sustainably live off the land – Nómada offers a unique coastal dining experience interpreted through the distinctive tastes of vibrant Thai ingredients.

Continuing the mouthwatering success of the first Nómada restaurant at Dusit Thani Hua Hin resort, Nómada Pool Lounge Bangkok brings this exciting dining experience to the heart of the capital – this time a lively al fresco poolside setting within Dusit’s elegant standalone restaurant venue, Baan Dusit Thani, on Sala Daeng Road.

Diners can order a la carte, opt for special set menus (starting at only THB 999++ per person – see below), or even simply drop by for drinks. Alongside craft beers, fine wines, healthy juices, and classic cocktails, there are plenty of unique concoctions to choose from, including signature cocktails specially created to pair with Chef Andre’s distinctive flavorsome fare.

Menu highlights

With its serene garden setting, Nómada Bangkok provides a relaxed and inviting atmosphere for families and friends to enjoy leisurely lunches, dinners, and brunches, all while relishing unforgettable flavours from both land and sea.

Locally caught fish, premium meats, fresh seasonal harvests, and artisanal products feature prominently on the menu. Chef Andre and his team use this delectable produce to create authentic South American dishes perfect for sharing, as well as creative small plates and tapas – all at excellent value for money.

Highlights of the small plates and tapas selection, which starts at just THB 350++, include Calamares fritos (Fried battered squid, house-made tartar sauce); Fish and shrimp tiradito (Fresh sea bass, grilled river prawns, Chilean yellow chilli sauce, chives, pebre condiments); Beef tartare (House-smoked beef fillet, local spices, soy-cured egg, avocado mousse, milk emulsion); Rock lobster in Chilean sauce (deglazed with white wine); Fresh oysters with condiments (Normandy oysters no.3, salmon roe, smoked herring pearl caviar); Ceviche with mango; and Nómada wanton cones.

The Ceviche is a great example of the bold and fresh flavours offered at Nómada. Originating from Peru, this renowned dish is made from fresh sea bass cured in lime juice and served with a delicious medley of mango, spices, celery, ginger, shallots, and coriander.

The signature Nómada wanton cones, featuring three different crispy tartare cones – including Salmon with soy and sesame oil; Shrimp with house-made mayonnaise and crispy quinoa; and Crab with avocado brunoise – demonstrates the lush layering of textures that further delight the taste buds.

More flavor comes from the open fire grill, where a wide range of meat, seafood and sides are carefully cooked over dry, seasoned wood, infusing each morsel with earthy, umami goodness.
The premium cuts of beef slow-cooked Picanha, Ribeye, Tenderloin and generous servings of half-chicken, whole red snapper, and Indian Ocean Octopus are ideal for sharing and very reasonably priced, with mains starting at just THB 550++. These can be teamed with sides such as Grilled organic vegetables; South American-style corn purée (Corn Tamales) grilled in a banana leaf; Mashed potatoes; and Sautéed baby carrots with crispy garlic, walnuts, and coriander sauce (starting at only THB 180++).

Dessert offerings are thoughtfully curated to align with the changing seasons. Guests can also indulge in a delectable array of sweets from the neighboring Dusit Gourmet.

Made using fresh and wholesome fruits, herbs and botanicals, Nómada’s beverage offerings include guilt-free and therapeutic pleasures as well as creative cocktails bursting with tropical flavours.

Set lunch/dinner menu:

Set lunch and dinner menus are available featuring a choice of one appetizer, one main course, one side dish, and one dessert for THB 999++ per person. For an additional THB 999++ per person, diners can enjoy two hours of free-flow Aperol Spritz, red wine, white wine, Asahi draught beer and soft drinks.

Saturday and Sunday Brunch:

Nómada’s special brunch set, priced at THB 2,690++ per set, is good for 2 – 3 people to share and features three appetizers, one main course, and three delectable sides. Two hours of free-flow Aperol Spritz, red wine, white wine, Asahi draught beer and soft drinks can be added for THB 999++ per person.

Nómada Party Package (for up to 10 people):

For a tasty celebration to remember, the Nómada Party Package kicks off with 10 welcome shots of Thai rum served in a South American style and features 1.5 Kg of Grilled Beef Picanha – the pinnacle of Brazilian steak cuts – four delicious sides, one bottle of house sparkling wine, two bottles of house wine (red or white), and a selection of desserts from Dusit Gourmet. All for only THB 9,999++.

Meet the head chef: Andre Josef Nweh Severino

Peruvian Chef Andre brings with him more than 20 years of experience leading the kitchens of renowned and respected establishments in Santiago, Chile. Among them: Osaka and Kilometro Cero restaurants at W Hotel Santiago; Pulmay Restaurante – rated among the top seafood restaurants in the city – and Restaurant Kechua, which specialises in cuisine from Peru. Passionate about sustainability and working with local ingredients, Chef Andre carefully selects the finest produce to create bold new flavours inspired by the South American coast and embraces open-fire cooking techniques for maximum taste and texture.

Nómada Pool Lounge Bangkok opens every Monday – Friday from 5pm – 10pm, and Saturday – Sunday from 11am – 10pm.

Live DJs every Friday evening and during Saturday and Sunday brunch add to the laid-back, feasting fun.
