Banyan Tree Phuket welcomes Bangkok’s Haoma Restaurant

On December 10-11, 2020 the Banyan Tree Phuket welcomes Chef Owner Deepanker “DK” Khosla from Bangkok’s Haoma Restaurant.

The creative visionary behind Haoma Restaurant will serve a Neo-Indian tasting menu highlighting its farm-to-table cuisine and sustainable cooking practices.  The cuisine at Haoma reflects Chef-owner Deepanker “DK” Khosla’s Indian heritage, expressed through homegrown Thai ingredients and modern European gastronomy. A big part of the magic derives from the resources from its very own backyard urban farm where they grow vegetables, herbs and fish hyper locally producing zero waste in the process. Haoma is based on a simple idea: presenting food that looks good, tastes good, and makes you feel good.

For two nights only on December 10-11 at the Banyan Tree Phuket Chef DK will showcase a special set paired with exceptional wines. This farm-to-table 6-course menu will include dishes such as “Chaat” a pomegranate sphere with spices, yogurt, mint & tamarind chutney and “the disappearing duck”  tender boneless chicken wing dusted with chaat masala served with duck mousse and herbs from the urban farm. Diners will also experience a reinterpretation of an ancient recipe from the “Nilgiri” tribes in Southern India made from mince lamb spiced with spinach curry and topped with a layer of scallop. Ending on a sweet note will be Haoma’s signature dessert “Chyawanprash” created with burnt milk ice cream, pistachios and mulberry jam.
