NEW FINE DINING INDIAN RESTAURANT OPENS IN BANGKOK

Prime Chidlom welcomes the opening of new modern Indian restaurant, Inddee.

Tucked away in an alley off Langsuan, Inddee is a dining destination that reflects and celebrates Indian culture through spatial design, art, and gastronomy. Housed in a restored 19th century home, Inddee can accommodate up to 50 diners, seated over two floors, and within its various zones. The ground floor showcases two open kitchens and a wine cellar, while the upper floor connects two elegant, yet distinctly different areas with a live cooking station: one inside a glasshouse and the other under a vaulted ceiling. 

The name “INDDEE”, a homophone for the independent genre, hints at its Indian inspiration. Inddee is a newcomer to Bangkok’s restaurant landscape that offers a creatively simple take on Indian traditions and knowledge. “Atithi Devo Bhava”, from Sanskrit, meaning the guest is akin to God, became the overarching philosophy and is deeply ingrained in the genuine, warm, and heartfelt hospitality from the moment of arrival to bidding goodnight.

There is a great amount of hidden symbolism in the brand, beginning with the logo icon, which depicts an arch, the delta triangle, and a matchstick. Arches, emblematic of India and fill the restaurant, portrayed in a simplified elegance. The delta symbolizes fire, which is at the core of Inddee’s cooking. Finally, the matchstick, or the “I” for Inddee, signifies the human element required in the transformative moment of ignition.

The main idea behind the design was simple: to refurbish and transform this building entirely, offering a completely unique and memorable experience to our diners. Leading the interior, landscape and illumination design was Matteo Messervy, renowned as one of the world’s top lighting designers. His impactful light installations transform interiors, adding a sense of airiness and complementing the architectural designs. The restaurant’s garden brings diners close to nature, filled with ferns, fountains, and a thick green fence that clusters its environment and keeps a dense fog circulating behind the windows. 

Head Chef Sachin Poojary and his team curate a 7-course tasting menu that transports diners on a creatively simple journey through Indian traditions and knowledge. The tasting menu exists in two options, one being entirely vegetarian, on which the team puts a strong emphasis. Each dish is marked on the menu with a location in India of origin and our team share with our diners, its story, connected to the places they have lived, were inspired by, or travelled to. Expect dishes like a khari chai unlike ever-before, an addictive coal-kissed scallop with injipuli dressing and a juicy quail–a dry tribute to the Nagpuri saoji, both prepared using the art of open-fire cooking. Upon arrival, following several elegant, flavour-bomb bites, diners have an option to add from supplement dishes to extend their experience. These include a grilled lamb chop marinated in coriander and chili, a grilled lobster tail with kanji porridge and a sol kadhi oyster among others. Chef Sachin’s culinary expertise was forged at The Taj Mumbai – the vanguards of showcasing traditional Indian cooking. Before moving to Bangkok, Chef Sachin was in Mumbai, leading Wasabi from Iron Chef Masaharu Morimoto, recognized by San Pellegrino as one of Asia’s 50 Best Restaurants in 2018.

Inddee’s wine program, curated by sommelier Thanakorn „Jay” Bottorff, takes guests on a personal journey, a diary of sorts, featuring over 60 wines by glass and over 600 labels by bottle. The program shines a spotlight on the producers and selected winemakers. Bottorff’s aim was to create a guest-friendly wine list that serves as an intriguing book of discovery rather than a mere catalogue of names and appellations. Wines are categorized alphabetically by grape varieties for bottles, and by intensity for wines by glass. Additionally, Inddee offers tasting portions of wine pairing in either 9 glasses for 3,200 THB++ or 7 glasses for 2,500 THB++, and two fun wine challenges: a blind tasting or a riddle, where winners receive either a glass or bottle of wine as a prize.

The cocktail program, led by the accomplished bartender, Heena Kewalramani, shares a story of her liquid playground divided into three moods: eager for a pick-me-up, inquisitive and playful with signature aperitifs, martinis, and reinvented classics. “We built most of our drinks creatively simple, by taking a classic cocktail and reinventing it with our local flavours, whilst preserving its core essence.”, says Kewalramani. Take a spritz with a robata charred pineapple or imagine a mango lassi but light in her Mango Lassi 2.0. Kewalramani resides in Barcelona, where she created drinks for the old five star dive bar Two Schmucks (#7 on The World’s 50 Best Bars) and currently works at the newly opened Spanish outpost of Florería Atlántico (#18 on The World’s 50 Best Bars). 

Inddee is open for dinner only from Monday to Sunday from 17:30hrs until 23:30hrs. The 7-course tasting is priced at 3,200 THB ++ per person. Bookings opened on the 30th of May. Currently reservations are available until the end of July and on the 1st of July, they will be released for August.
