While we’ve been distracted by the lights of Best 50 which was aptly deflected by the arrival of Michelin, we we’re all wondering who in-fact would be worthy. Most of us, are talking of the new bloods, of the innovators and the appropriately famous. Meanwhile Chef Hervé, the much beloved chef of the French Restaurant heydays, who rose to fame with ‘Le Beaulieu’ (which fell quite as spectacularly), is now plotting away, back in the kitchen before it all began.

Chef Hervé launched Aldo’s Bistro in 2015 prior to opening Le Beaulieu. I never had the chance to eat there back then but whatever it is he is doing now is significantly distinct from what is being served in most French Restaurants in Bangkok today.

From what we garnered, Chef Hervé has a  relatively free rein to what he can bring into his kitchen, like pigeon, white asparagus and the exotic finger lime. Combining incredible produce with the abundance of skill and history in the industry that Chef Hervé has acquired, and you already have a recipe for remarkableness. Most of which credits Chef Hervé’s long and painstaking technique and arduousness in detail. This, I imagine, is destined to reach a standard which could rival his homeland. Yes, I said that. It was that good. Yet, the questions still remains….where the hell is everyone?

Regardless of the vast emptiness of a great fine dining room, and although many other chefs may not have the time, freedom or luxury to develop the immaculate menu, Chef Hervé fascinating and very public journey of highs and lows have led to this pinnacle moment. The sweet taste of a come-back. You would be mad to miss it.
