Over the past 23 years, he has developed his craft through senior culinary roles, including Sous Chef at the iconic New York Grill, where he refined his approach to contemporary grill cuisine, ingredient-led menus and precise execution.\nBefore joining Park Hyatt Bangkok, Chef Tomoya served as Chef de Cuisine at Park Hyatt Siem Reap. His career has been shaped by a strong commitment to culinary innovation and the mentoring and development of emerging talent.\n\nA recognized competitor, Chef Tomoya has earned championship titles at the Japan & Micronesia Region Good Taste Series 2018 and the Asia Pacific Area Good Taste Series 2018. These achievements reflect his technical skill, creativity and considered approach to flavor.\nAt Penthouse Grill, Chef Tomoya introduces a menu that combines classic grill traditions with Japanese precision and carefully sourced ingredients. Highlights include King Crab Waldorf Salad, Hokkaido Scallop Ceviche and Foie Gras Terrine served with grilled brioche, sour cherry compote and apple confiture.\n\nBringing Japanese influences to the main-course selection, highlights include the 600-gram Westholme Wagyu L-Bone and 400-gram aged Bluefin Tuna. The menu also features Miso-Glazed Sloane’s Pork Chop and Grass-Fed Lamb Chops served with fresh lemon, mint chimichurri and harissa.\nChef Tomoya’s cooking is guided by seasonality, balance and respect for each ingredient.
