Their standout success, pesticide-free white asparagus, is the season’s guiding star. Once considered unsuited for Thai conditions, this elegant crop has flourished after five years of dedicated cultivation.\nChef Giacomo responds with two refined interpretations. The first is wok-seared spears glazed in wildflower honey and fermented soy, evoking warmth and gentle umami. The second features tender tips poached in milk and sugar, served with a white chocolate Valrhona beurre blanc and daikon unexpected, textural, and quietly indulgent. The duo is more than a dish; it’s a tribute to Thai soil’s untapped potential.\nAcross the menu, etcha explores the land’s broader palette: lemongrass, Thai eggplants, vibrant herbs, and native vegetables, each treated with restraint and joy.
