Mineral Duck Aged for 3 weeks with beetroot and coffee. Extraordinary. The coffee may have been a little over powering for the unique texture of duck via aging process and technique, it’s as though it had its own grade of texture. Not firm, not soft, not stringy, not chewy even in the slightest.. Just right.
