Grand Hyatt Singapore's Mezza9 Kitchen Is the “Sustainable-Friendly” Brunch Solution

          This epic brunch at Mezza9 Kitchen at Grand Hyatt Singapore on Scotts Road, sees 9 different dining experiences but with a genuine thought to sustainability, healthy eating and food waste, having been awarded the Chain of Custody (CoC) certifications by the Marine Stewardship Council (MSC) and Aquaculture Stewardship Council (ASC).

          The majority of the hotel’s organic vegetables and herbs have been sourced from
cooperative growers in Cameron Highlands, or from the hotel’s very own rooftop garden.
They even turn any food waste into compost dust with a a high tech piece of machinery customised just for Grand Hyatt Singapore.           The mezza9 kitchen is led by Executive Sous Chef Martin Satow, a Hamburg native who
specialises in seafood. Chef Martin’s strong advocacy for sustainable seafood during his
tenure in Andaz Liverpool, London in 2012 saw the restaurant ‘Catch’ become one of the top

          But what was most refreshing, given we’re visiting from a country of hot curries and intense spice, was the Chinese spread. The handmade steamed dumplings, the wok-fried and roasted duck and suckling pig were one of the greatest momentos of Mezza9 Kitchen .
