The majority of the hotel’s organic vegetables and herbs have been sourced from
cooperative growers in Cameron Highlands, or from the hotel’s very own rooftop garden.
They even turn any food waste into compost dust with a very high tech piece of machinery. But with all the feel good the question comes down to taste and handling, and yes, they’ve pretty much nailed that too.

The mezza9 kitchen is led by Executive Sous Chef Martin Satow, a Hamburg native who
specialises in seafood. Chef Martin’s strong advocacy for sustainable seafood during his
tenure in Andaz Liverpool, London in 2012 saw the restaurant ‘Catch’ become one of the top
three sustainable seafood restaurants in the UK, certified by Fish2Fork.

But what attracted me most, given we’re visiting from the country of spice were the awesome Chinese offerings, like the handmade steamed dumplings or the , wok-fried or roasted duck and suckling pig..
