The Costardi Brothers make an impact with their pure and “simple” risotto by using their own brand of rice and unique techniques. Flavours are reminiscent of the brothers childhood memories with a modern twists. Al dente and hearty, earthy and soulful. This was my least favourite of the @zonfrillo menu but by no means, not a fascinating journey. The subtle touch of Thai flavours, similar to Tom Kha (Thai coconut curry with lemongrass and galangal root) but more complex. Although the texture of the horseshoe crab roe was rubbery and in abundance. I would have preferred some pop or crunch or maybe a fresh component, like placing a spoonful in small endives or Thai cabbage leaves that you could pop in your mouth.
