Chef Somkid Ketkaew Revives and Reinvents a Rural Thai Dish at the Sunday Brunch Buffet at Praya Kitchen Bangkok Marriott Hotel the Surawongse

          It’s not often at hotel buffets that you encounter an entire cooking station dedicated to a chef’s signature dish, but upon witnessing a crowd of wide-eyed diners gathering around a large vat of steaming hot curry, heaped with whole pieces of crimson-shelled lobsters and spices which permeated the whole room, we came to realise that the ‘Kaeng Kua Lobster Bai Cha Plu’ (Lobster Curry with Betel Leaf) was the star of Marriott Surawong Bangkok buffet line-up.

          Chef Somkid Ketkaew, the head Chef of the Praya Kitchen, revived and modernised a nostalgic dish that had all but disappeared from Bangkok menus, a fond memory from his childhood spent in Chantaburi in eastern Thailand, where wild betel leaf once grew in abundance. Typically the dish is prepared with cockles, but Chef has replaced them with local Phuket lobster, along with plenty of spice and betel leaf that stay true to tradition.

          Chef Somkid’s version is comprised of fresh steamed Phuket lobsters immersed in wild Betel Leaf curry. The lobster which has absorbed the curry’s immensely potent flavours, is plucked out and placed on top of a wide bowl full of kanom jiin (fermented rice noodles). Finally, a ladle of the super spicy curry is poured over to complete this lovely authentic Thai dish.
